Pici Cacio e Pepe

INGREDIENTI ( per 4 persone):

 

  • 500 g pici
  • 150 g pecorino romano
  • 1 cucchiaio Pepe nero

Procedimento:

  1. In una pentola cuocere i pici in abbondante acqua salata

  1. In una padella calda far tostare per un paio di minuti il pepe nero macinato

  1. Aggiungere nella padella un mestolo di acqua di cottura per bloccare la cottura del pepe

  1. Mettere 100 g di pecorino romano in una ciotola e aggiungere un paio di mestoli di acqua di cottura. Mischiare bene con l’aiuto di una frusta sino ad ottenere una crema omogenea.

  1. Una volta cotti, versare i pici nella padella con il pepe, la crema di pecorino, 50 g di pecorino grattugiato e un mestolo di acqua di cottura.
